6 oranges
2 limes
2 red grapefruits
1 large shallot, sliced

1 tsp. of lemon zest
2 tbsp. of lemon juice
1/4 cup of crème fraîche

1tsp. poppy seeds
Salt to taste
Start off by peeling the citrus fruits and pulling them apart into sections. The lime and grapefruit sections you’ll cut into thirds, the orange slices you’ll leave whole. Throw them in a bowl with the shallot and parsley.
Then in a smaller bowl, whisk the lemon zest, lemon juice, maple syrup, crème fraîche, and poppy seeds together. Season with a tiny bit of salt and pour over the fruit. Toss gently and serve.
Melon and Strawberry Salad
Melon, strawberry, and a spicy lemongrass syrup make for a great snack or addition to any meal. Ingredients include:
2 lemongrass stalks
2 hot red chiles
Zest of one lime, finely grated
1 cup sugar
1 lb. of strawberries
1 lb. of Canary or Crenshaw melon, chopped
2 tbsp. of slivered mint leaves
2 tsp. of crystallized ginger, minced
1/2 cup of crème fraîche
Start with a large bowl of ice. In that bowl, place another smaller bowl. Then, in a medium saucepan, mix the chiles, lemongrass, sugar, and lime zest with 1 cup of water. Bring to a boil and stir until the sugar is dissolved. Then simmer about 8 minutes until thickened. Transfer to the bowl in the ice water where it’ll chill for about 15 minutes.
Now toss the strawberries, melon, and mint together in a large bowl and strain the lemongrass syrup over it. Toss gently and refrigerate until slightly chilled.
Finally, stir the ginger and crème fraîche together in a bowl. Serve the salad in bowls with a bit of ginger cream on top.
Hawaiian Fresh Fruit Salad
This one is fast and simple. You’ll need:
1/3 cup of fresh lime juice
1 1/2 tbsp. of honey
3/4 tsp. fresh ginger, finely chopped
6 cups total of chopped pineapple, raspberries, blueberries, bananas, and oranges
Stir the lime juice, honey, and ginger together in a large bowl, then add fruit. Toss together and serve.
